Ingredients

12 oz fettuccine pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized chunks

Salt and freshly ground black pepper (to taste)

8 oz cremini or button mushrooms, sliced

3 cloves garlic, minced

2 tablespoons unsalted butter

1 ½ cups heavy cream

1 cup freshly grated Parmesan cheese

¼ teaspoon ground nutmeg (optional)

Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the fettuccine in salted boiling water until al dente. Reserve ½ cup pasta water, drain, and set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown and fully cooked. Remove and set aside.
  3. In the same skillet, heat the remaining olive oil. Add mushrooms and cook until browned, about 5–7 minutes. Add garlic and sauté for 1–2 more minutes.
  4. Lower the heat and add butter. Once melted, stir in heavy cream. Simmer for 3–4 minutes.
  5. Add Parmesan cheese and nutmeg (if using). Stir continuously until the sauce is smooth.
  6. Return chicken to the skillet and add fettuccine. Toss to coat everything in the sauce. Use reserved pasta water as needed to adjust sauce consistency.
  7. Garnish with chopped parsley and serve immediately.
