Ingredients
4 boneless, skinless chicken breasts
8 oz (225g) cream cheese, softened
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp dried Italian seasoning
Salt and pepper to taste
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups Italian-style breadcrumbs
1/2 cup grated Parmesan (for coating)
Olive oil, for frying
1 1/2 cups marinara or tomato sauce, warmed
Fresh parsley or basil, chopped (optional)
Instructions
- In a bowl, mix cream cheese, Parmesan, mozzarella, garlic powder, onion powder, and Italian seasoning. Season to taste.
- Cut a pocket in each chicken breast. Stuff with cheese mixture and secure with toothpicks.
