Ingredients

1 pound ground chicken

1/3 cup grated parmesan cheese

1/3 cup breadcrumbs

1 large egg

2 cloves garlic (minced)

2 tablespoons chopped parsley

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons butter

2 cloves garlic (minced for sauce)

3/4 cup chicken broth

1/4 cup lemon juice

1 teaspoon lemon zest

2 tablespoons capers

1 teaspoon cornstarch (optional)

1 tablespoon water (optional for slurry)

Fresh parsley and lemon slices for garnish


Instructions

1. In a large bowl, mix ground chicken, parmesan, breadcrumbs, egg, garlic, parsley, salt, and pepper.

2. Form into 1.5-inch meatballs.

3. In a skillet, heat olive oil over medium heat. Brown meatballs on all sides, about 6–8 minutes. Transfer to a plate.

4. In the same skillet, melt butter and sauté garlic for 30 seconds.

5. Add chicken broth, lemon juice, zest, and capers. Simmer for 2 minutes.

6. Return meatballs to skillet and simmer 10–12 minutes until fully cooked.

7. (Optional) Mix cornstarch and water, stir in to thicken sauce.

8. Garnish with parsley and lemon slices.

9. Serve warm over pasta, rice, or veggies.

Notes

Use ground turkey as a swap for chicken if preferred.
