Ingredients
20–24 jumbo pasta shells, cooked al dente
2 cups cooked chicken breast, shredded or diced
2 tbsp olive oil
4 tbsp butter, divided
5 garlic cloves, minced
½ cup white wine (or chicken broth)
2 tbsp lemon juice
1 tsp Italian seasoning
¼ tsp red pepper flakes (optional)
1 cup heavy cream
4 oz cream cheese, softened
½ cup grated Parmesan cheese
1 cup shredded mozzarella cheese (plus extra for topping)
Salt and black pepper to taste
Fresh chopped parsley, for garnish
Instructions
- Boil jumbo pasta shells in salted water until al dente, then drain and rinse with cold water.
- In a skillet, heat olive oil and 2 tbsp butter. Sauté garlic for 1–2 minutes until fragrant.
- Add white wine (or broth), lemon juice, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes.
- Stir in chicken, heavy cream, cream cheese, and half the Parmesan. Mix until creamy.
- Remove from heat and stir in mozzarella cheese. Season with salt and pepper.
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
- Fill each shell with the chicken mixture and place in the dish.
- Melt remaining 2 tbsp butter and drizzle over the shells. Top with remaining Parmesan and extra mozzarella.
- Cover with foil and bake for 20 minutes. Uncover and bake an additional 10–15 minutes until golden.
- Garnish with parsley and serve warm.
