Ingredients

2024 jumbo pasta shells, cooked al dente

2 cups cooked chicken breast, shredded or diced

2 tbsp olive oil

4 tbsp butter, divided

5 garlic cloves, minced

½ cup white wine (or chicken broth)

2 tbsp lemon juice

1 tsp Italian seasoning

¼ tsp red pepper flakes (optional)

1 cup heavy cream

4 oz cream cheese, softened

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese (plus extra for topping)

Salt and black pepper to taste

Fresh chopped parsley, for garnish


Instructions

  1. Boil jumbo pasta shells in salted water until al dente, then drain and rinse with cold water.
  2. In a skillet, heat olive oil and 2 tbsp butter. Sauté garlic for 1–2 minutes until fragrant.
  3. Add white wine (or broth), lemon juice, Italian seasoning, and red pepper flakes. Simmer for 2–3 minutes.
  4. Stir in chicken, heavy cream, cream cheese, and half the Parmesan. Mix until creamy.
  5. Remove from heat and stir in mozzarella cheese. Season with salt and pepper.
  6. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
  7. Fill each shell with the chicken mixture and place in the dish.
  8. Melt remaining 2 tbsp butter and drizzle over the shells. Top with remaining Parmesan and extra mozzarella.
  9. Cover with foil and bake for 20 minutes. Uncover and bake an additional 10–15 minutes until golden.
  10. Garnish with parsley and serve warm.
