Ingredients

1 lb boneless, skinless chicken breasts (cut into small pieces)

2 tbsp olive oil

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp garlic powder

½ tsp onion powder

½ tsp salt

¼ tsp black pepper

Juice of 1 lime

1 tbsp chopped cilantro (plus more for garnish)

1 cup diced tomatoes

½ cup diced red onion

1 avocado, diced

½ cup crumbled queso fresco

2 cups shredded red cabbage

Corn tortillas (8 small)

Lime wedges for serving


Instructions

  1. In a large bowl, mix olive oil, spices, lime juice, and chopped cilantro. Add diced chicken and coat evenly. Marinate for at least 20 minutes.
  2. Heat a skillet over medium-high heat. Cook marinated chicken 6–8 minutes until fully cooked and slightly charred.
  3. Warm tortillas on a skillet for 20–30 seconds per side.
  4. Assemble tacos: cabbage, chicken, tomatoes, onion, avocado, and queso fresco. Top with cilantro and lime juice.
