Ingredients

2 large boneless skinless chicken breasts, sliced in half lengthwise

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic, minced

2 tablespoons all-purpose flour

1 1/2 cups milk

1 cup cheddar cheese, freshly shredded

1/2 cup mozzarella cheese, freshly shredded

1/3 cup red bell pepper, finely diced

2 tablespoons fresh parsley, chopped

1 teaspoon lemon juice


Instructions

1. Pat the chicken dry and season both sides with salt, black pepper, garlic powder, and paprika.

2. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5 to 6 minutes per side until golden and cooked through. Remove to a plate.

3. In the same skillet, melt the butter and add the minced garlic. Cook for 30 seconds until fragrant.

4. Sprinkle in the flour and whisk for 1 minute to form a smooth roux.

5. Slowly pour in the milk, whisking constantly, and cook for 2 to 3 minutes until the sauce thickens.

6. Lower the heat and stir in the cheddar and mozzarella until fully melted and smooth.

7. Stir in the lemon juice, diced red bell pepper, and most of the parsley.

8. Return the chicken to the skillet and spoon the cheese sauce over the top. Simmer gently for 1 to 2 minutes.

9. Garnish with the remaining parsley and serve hot.
