Ingredients
1 pound ground beef
1 tablespoon olive oil
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup roasted Hatch green chiles, chopped
1 cup green enchilada sauce or chili verde sauce, divided
2 cups cooked white rice
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
6 large flour tortillas
2 tablespoons chopped fresh cilantro
Instructions
1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds.
2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.
3. Stir in the cumin, chili powder, salt, and black pepper until the beef is evenly seasoned.
4. Add the chopped Hatch green chiles and 1/2 cup of the green enchilada sauce. Simmer for 3 to 4 minutes.
5. Stir in the cooked rice, then mix in the Monterey Jack cheese and 1/2 cup of the cheddar cheese until the filling is well combined.
6. Divide the filling evenly among the tortillas. Roll each tortilla tightly into a burrito.
7. Place the burritos seam-side down in a clean skillet over medium heat and toast for 2 to 3 minutes per side until golden.
8. Warm the remaining 1/2 cup sauce and spoon it over or serve it alongside the burritos.
9. Top with the remaining cheddar cheese and fresh cilantro before serving.
Notes
Do not overfill the tortillas or make the filling too wet, or the burritos can split while rolling and lose their crisp texture when toasted.
