Ingredients

1.5 pounds pork shoulder or pork butt

3 tablespoons hoisin sauce

2 tablespoons light soy sauce

1 tablespoon dark soy sauce

2 tablespoons honey

1 tablespoon brown sugar

1 tablespoon Shaoxing wine or dry sherry

1 teaspoon Chinese five spice powder

3 cloves garlic, minced

2 drops red food coloring (optional)


Instructions

1. In a bowl, mix hoisin, soy sauces, honey, brown sugar, Shaoxing wine, five spice powder, garlic, and red food coloring (if using).

2. Place pork in a zip-top bag or bowl and pour the marinade over. Coat well. Refrigerate overnight.

3. Preheat oven to 375°F. Line a baking sheet with foil and place a rack on top.

4. Remove pork from marinade, reserving liquid. Place pork on rack and roast for 25 minutes.

5. Simmer reserved marinade in a saucepan until thickened.

6. Brush glaze over pork, roast for another 20 minutes, brushing every 5–7 minutes.

7. Let pork rest for 10 minutes, then slice and serve.
