Ingredients

2 cups shredded sweetened coconut

1/2 cup maraschino cherries, finely chopped and drained

3 tablespoons cherry preserves or jam

2 cups powdered sugar

1/2 teaspoon almond extract

10 ounces dark chocolate melting wafers

1/3 cup chopped pecans


Instructions

1. In a large bowl, beat the softened cream cheese with powdered sugar until smooth.

2. Fold in chopped maraschino cherries, almond extract, and shredded coconut until fully combined.

3. Chill the mixture for 30 minutes to firm.

4. Scoop out a tablespoon, flatten slightly, and add a bit of cherry preserves in the center. Wrap the coconut mixture around it and roll into a ball.

5. Repeat with the remaining mixture.

6. Place all truffles on a parchment-lined tray and freeze for 30 minutes.

7. Melt chocolate wafers according to package instructions.
