Ingredients

2 cups whole milk

3 large eggs

2/3 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon vanilla extract

1 tablespoon unsalted butter

1/2 teaspoon ground cinnamon (plus more for topping)

1 pre-baked 9-inch pie crust

1 cup whipped cream (optional, for topping)

Instructions

1. Preheat oven to 375°F (190°C). Blind bake the pie crust until lightly golden, then let it cool.

2. In a medium saucepan, whisk together sugar, cornstarch, and a pinch of salt. Slowly add milk while whisking until smooth and heated.

3. In a separate bowl, whisk eggs. Temper them by adding 1/2 cup of the hot milk mixture while whisking, then return to the saucepan.

4. Continue cooking over medium heat, whisking constantly until the mixture thickens to a pudding consistency.

5. Remove from heat and stir in vanilla and butter until smooth.

6. Pour the custard into the baked pie crust and smooth the top. Sprinkle with cinnamon.

7. Let the pie cool to room temperature, then refrigerate for at least 4 hours.

8. Top with whipped cream and extra cinnamon before serving, if desired.

Notes

Use a high-quality vanilla extract for best flavor.

Be sure to whisk constantly to avoid lumps or scrambled eggs in the custard.
