Ingredients
3 large egg whites, room temperature
3/4 teaspoon cream of tartar
3/4 cup granulated sugar
1 teaspoon vanilla extract
Red gel food coloring, as needed
Green gel food coloring, as needed
2 tablespoons holiday sprinkles, optional
Instructions
1. Preheat the oven to 225°F and line 2 baking sheets with parchment paper.
2. Add the egg whites and cream of tartar to a clean mixing bowl and beat until foamy.
3. Gradually add the sugar, 1 tablespoon at a time, while beating continuously.
4. Continue beating until the mixture becomes glossy and holds stiff peaks.
5. Beat in the vanilla extract just until combined.
6. Brush red and green gel food coloring in streaks inside a piping bag fitted with a large star tip.
7. Spoon the meringue into the piping bag and pipe small swirls onto the prepared baking sheets.
8. Top with holiday sprinkles if using.
9. Bake for 1 hour, then turn off the oven and let the meringues sit inside for 1 additional hour without opening the door.
10. Remove and cool completely before storing in an airtight container.
Notes
Make sure the mixing bowl and beaters are completely clean and dry, because even a tiny bit of grease can keep the egg whites from whipping properly.
