Description

Christmas Thumbprint Cookies with Raspberry Jam are the kind of festive treat that instantly makes a holiday cookie tray feel complete. These buttery, tender cookies have a soft shortbread-style texture, a sparkling sugar coating, and a bright raspberry jam center that adds just the right pop of sweetness. They are perfect for Christmas baking, cookie exchanges, easy dessert ideas, holiday parties, and make-ahead food ideas when you want a simple recipe that still looks beautiful and special.

Ingredients

1 cup unsalted butter, softened

2/3 cup granulated sugar

1 large egg yolk

1 teaspoon vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt

1/3 cup raspberry jam

1/4 cup granulated sugar, for rolling

Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a large bowl, beat the softened butter and 2/3 cup granulated sugar until light and fluffy.

3. Mix in the egg yolk and vanilla extract until smooth and fully combined.

4. Add the flour and salt, then mix just until a soft dough forms.

5. Scoop out small portions of dough and roll them into 1-inch balls.

6. Roll each dough ball in the extra granulated sugar.

7. Place the dough balls on the prepared baking sheet, spacing them slightly apart.

8. Use your thumb or the back of a small spoon to press a shallow well into the center of each cookie.

9. Fill each center with a small spoonful of raspberry jam.

10. Bake for 12 to 14 minutes, or until the bottoms are lightly golden and the cookies are set.

11. Let the cookies cool on the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Do not overfill the jam centers, or the filling may bubble over the edges and spread too much while baking.
