Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2 medium apples, peeled and finely diced
1/3 cup brown sugar
1 teaspoon lemon juice
1 teaspoon cornstarch
2 tablespoons water
1/2 teaspoon ground cinnamon
2 tablespoons caramel sauce for drizzling, optional
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. Add the diced apples, brown sugar, lemon juice, cornstarch, water, and cinnamon to a small saucepan. Cook over medium heat for 6 to 8 minutes, stirring often, until the apples are tender and the filling is thick. Let it cool.
3. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
4. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
5. Mix in the egg and vanilla extract until fully combined.
6. Add the dry ingredients to the wet ingredients and stir until a soft dough forms.
7. Scoop the dough into 12 equal portions and roll into balls. Place them on the prepared baking sheet.
8. Press a shallow well into the center of each dough ball using your thumb or the back of a spoon.
9. Spoon the cooled apple filling into the center of each cookie.
10. Bake for 13 to 15 minutes, or until the edges are lightly golden.
11. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
12. Drizzle with caramel sauce if desired, then serve.
Notes
Do not add the apple filling while it is still hot, or it can soften the dough too much and cause the cookies to spread more than you want.
