Ingredients
1 ½ cups all-purpose flour
½ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 egg
¾ cup milk
⅓ cup melted butter
1 teaspoon vanilla extract
⅓ cup brown sugar
1 tablespoon cinnamon
2 tablespoons softened butter
½ cup powdered sugar
1 tablespoon milk
¼ teaspoon vanilla extract
Instructions
1. Preheat oven to 375°F (190°C) and line a muffin tin with liners.
2. In a large bowl, whisk flour, sugar, baking powder, and salt.
3. In another bowl, mix egg, milk, melted butter, and vanilla.
4. Combine wet and dry ingredients until just mixed.
5. In a small bowl, mix brown sugar, cinnamon, and softened butter into a paste.
6. Fill muffin cups halfway with batter, add a spoonful of cinnamon mixture, then top with more batter. Swirl with a toothpick.
7. Bake for 15–18 minutes until golden and a toothpick comes out clean.
8. For glaze: whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm muffins.
