Ingredients

2.5 lbs sweet potatoes, peeled and sliced

1.5 cups heavy cream

0.5 cup brown sugar

1.5 tsp ground cinnamon

0.5 tsp salt

1.5 cups mini marshmallows

0.75 cup chopped pecans

Instructions

1. Preheat the oven to 375°F and grease a large baking dish.

2. Peel and slice the sweet potatoes into 1/8-inch thick rounds.

3. In a bowl, whisk together heavy cream, brown sugar, cinnamon, and salt.

4. Layer sweet potatoes in the baking dish, overlapping slightly.

5. Pour some of the cream mixture over each layer as you go.

6. Cover with foil and bake for 45 minutes until the potatoes are tender.

7. Uncover, top with marshmallows and chopped pecans.

8. Bake for an additional 10–15 minutes until marshmallows are toasted.

9. Let it rest for 5 minutes before serving.

Notes

For extra richness, add a dash of nutmeg or cloves to the cream mix.

Thinly sliced potatoes are key to even baking — use a mandoline if possible.
