Classic Butter Chicken is a rich and creamy Indian dish made with tender marinated chicken simmered in a spiced tomato-based sauce. This flavorful dish is perfect when served with basmati rice or warm naan bread, making it a comforting meal for any occasion.
Ingredients
For the Chicken Marinade:
1 ½ lbs (700g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
¾ cup plain yogurt
1 tablespoon lemon juice
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
½ teaspoon chili powder (adjust to taste)
1 teaspoon salt
2 cloves garlic, minced
1 teaspoon grated ginger
For the Butter Chicken Sauce:
2 tablespoons butter
1 tablespoon oil
1 large onion, finely chopped
3 cloves garlic, minced
1 teaspoon grated ginger
2 teaspoons garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon turmeric
½ teaspoon smoked paprika
½ teaspoon chili powder
1 ½ cups tomato purée or crushed tomatoes
1 cup heavy cream (or coconut milk for a lighter version)
1 teaspoon sugar (optional)
Salt to taste
Fresh cilantro for garnish
Instructions
- Marinate the Chicken: In a large bowl, mix yogurt, lemon juice, garam masala, turmeric, cumin, coriander, paprika, chili powder, salt, garlic, and ginger. Add chicken and coat well. Cover and refrigerate for at least 1 hour (preferably overnight).
- Cook the Chicken: Heat oil in a large pan over medium-high heat. Cook the marinated chicken for 4-5 minutes until browned. Remove from the pan and set aside.
- Prepare the Sauce: In the same pan, melt butter and sauté onions until golden. Add garlic, ginger, and spices, cooking for 30 seconds.
- Simmer the Sauce: Stir in tomato purée and let simmer for 10-15 minutes. Add sugar and salt to taste.
- Add Chicken and Cream: Return chicken to the pan and cook for another 10 minutes. Stir in heavy cream and let simmer for 2-3 more minutes.
- Serve: Garnish with fresh cilantro and serve with basmati rice or naan. Enjoy!
