Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced
3 medium carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
2 cups cooked shredded chicken
8 cups chicken broth
20 ounces cheese tortellini
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
1/2 cup grated Parmesan cheese
Instructions
1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.
2. Stir in the garlic and cook for 30 seconds until fragrant.
3. Pour in the chicken broth and add the Italian seasoning, salt, and black pepper. Bring the soup to a gentle boil.
4. Stir in the shredded chicken and let it simmer for 5 minutes.
5. Add the cheese tortellini and cook according to package directions, usually 4 to 6 minutes, until tender.
6. Turn off the heat and stir in the chopped parsley.

Notes
Do not overcook the tortellini, or it can become too soft and start to break apart in the broth.
