Ingredients

1 cup brown or green lentils

3 cups water

1 1/2 cups finely chopped fresh parsley

1/4 cup finely chopped fresh mint

1/2 cup finely diced yellow or white onion

2 green onions thinly sliced

1 cup diced cucumber

1/4 cup fresh lemon juice

3 tablespoons extra virgin olive oil

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Rinse the lentils well under cold water and remove any debris.

2. Add the lentils and water to a saucepan and bring to a boil.

3. Reduce the heat and simmer for 20 to 25 minutes until the lentils are tender but still hold their shape.
