Ingredients

1 lb Italian sausage (mild or spicy)

4 cups chopped kale, stems removed

4 medium Yukon gold potatoes, diced

1 medium onion, finely chopped

3 cloves garlic, minced

6 cups chicken broth

1 cup heavy cream

1 tsp crushed red pepper flakes (optional)

Salt and black pepper, to taste

1 tbsp olive oil

Fresh bread or baguette, for serving (optional)


Instructions

  1. Heat olive oil in a soup pot. Add sausage and brown it, breaking it up as it cooks.
  2. Remove sausage and set aside. Sauté chopped onion in the drippings until translucent. Add garlic and cook briefly.
  3. Add diced potatoes and chicken broth. Bring to a boil, then simmer for 12-15 minutes until potatoes are tender.
  4. Stir in kale and browned sausage. Simmer 5 more minutes.
  5. Add heavy cream, season with salt, pepper, and optional red pepper flakes. Warm through without boiling.
  6. Serve hot with crusty bread if desired.
