Ingredients
1 lb ground chicken
2 cloves garlic, minced
1 small onion, finely chopped
2 tablespoons fresh cilantro, chopped
1/3 cup breadcrumbs
1 large egg
1 teaspoon fresh ginger, grated
2 tablespoons olive oil
2 tablespoons red curry paste
1 can (13.5 oz) full-fat coconut milk
1 tablespoon lime juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a large bowl, mix ground chicken, garlic, onion, cilantro, breadcrumbs, egg, ginger, salt, and pepper until just combined.
2. Form into 1.5-inch meatballs.
3. Heat 1 tablespoon olive oil in a skillet. Brown meatballs on all sides.
4. In the same skillet, add remaining olive oil, sautée extra onion and garlic until fragrant.
5. Stir in red curry paste and cook for 1 minute.
6. Pour in coconut milk, bring to a gentle simmer.
7. Add lime juice and gently place meatballs in the sauce.
8. Cover and simmer on low for 12–15 minutes, or until meatballs are cooked through.
9. Garnish with fresh cilantro and serve over rice or flatbread.
Notes
For extra flavor, let the meatball mixture rest for 10 minutes before shaping.
You can use ground turkey as a substitute for ground chicken if preferred.
