Ingredients
2 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon baking soda

3 large eggs
1 cup vegetable oil
2 teaspoons vanilla extract
1 1/2 cups mashed ripe bananas
1 cup crushed pineapple with juice
1 cup sweetened shredded coconut
1 cup chopped pecans
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
3 1/2 cups powdered sugar
1 teaspoon vanilla extract
2 tablespoons milk or heavy cream
1/4 cup chopped pecans for garnish
1/4 cup sweetened shredded coconut for garnish
Instructions
1. Preheat the oven to 350°F and grease and flour a bundt pan very well.
2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
3. Add the eggs, vegetable oil, vanilla extract, mashed bananas, and crushed pineapple with its juice. Stir until the batter is fully combined.
4. Fold in the shredded coconut and chopped pecans.
5. Pour the batter into the prepared bundt pan and smooth the top.
6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
