Ingredients
1.5 pounds chicken breast or thighs, diced
1 cup carrots, sliced
1 cup celery, sliced
1 cup frozen peas
1 medium yellow onion, diced
2 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups chicken broth
1 cup heavy cream
3 tablespoons unsalted butter
1 teaspoon dried thyme
2 tablespoons fresh parsley, chopped
1 teaspoon salt
0.5 teaspoon black pepper
8 biscuits (canned or homemade)
1 tablespoon melted butter (for brushing)
Instructions
1. In a large oven-safe skillet or Dutch oven, melt butter over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
2. Add diced chicken and cook until browned and fully cooked. Season with salt, pepper, and thyme.
3. Sprinkle in the flour and stir to coat the chicken and vegetables. Slowly add chicken broth, stirring constantly.
4. Pour in heavy cream and simmer the mixture until slightly thickened.
5. Add peas and parsley. Stir well and taste for seasoning.
6. Top the mixture with biscuits. Brush each with melted butter.
7. Bake at 375°F for 20–25 minutes, or until biscuits are golden and cooked through.
8. Serve hot and enjoy your comforting dish!
Notes
For even fluffier biscuits, place them closer together so they rise up more than out.
You can substitute the peas with green beans or corn for variation.
