Ingredients
2 tablespoons butter
1 cup long-grain white rice
2 cups chicken broth
1/2 cup finely diced onion
1/3 cup finely diced red bell pepper
2 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley or sliced green onions
Instructions
1. Melt the butter in a large skillet or saucepan over medium heat.
2. Add the diced onion and red bell pepper, then cook for 3 to 4 minutes until softened.
3. Stir in the minced garlic and cook for 30 seconds.
4. Add the uncooked rice and stir for 1 to 2 minutes to lightly toast it.
5. Sprinkle in the paprika, chili powder, salt, and black pepper. Stir well.
6. Pour in the chicken broth and bring the mixture to a gentle boil.
7. Reduce the heat to low, cover, and simmer for 18 to 20 minutes until the rice is tender and the liquid is absorbed.
8. Remove from the heat and let the rice rest, covered, for 5 minutes.
9. Fluff with a fork and stir in the parsley or green onions before serving.
Notes
Do not lift the lid while the rice is simmering, or the trapped steam will escape and the rice may cook unevenly or turn out dry.
