Ingredients

4 large eggs

1 cup cottage cheese

1 cup milk or cream

1 cup grated cheddar or Gruyère cheese

2 cups fresh spinach (or 1 cup thawed frozen spinach, squeezed dry)

1 small onion or shallot, finely chopped

1/4 teaspoon ground nutmeg

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped chives or parsley (optional)

Butter or cooking spray (for greasing)


Instructions

1. Preheat oven to 375°F and grease a 9-inch pie dish or round pan.

2. Sauté the chopped onion in a skillet until soft and translucent. Add spinach and cook until wilted. If using frozen spinach, skip sautéing.

3. In a large bowl, whisk eggs. Add cottage cheese, milk, grated cheese, salt, pepper, and nutmeg. Mix well.

4. Stir the cooked spinach and onion mixture into the egg mixture.

5. Pour the mixture into the prepared pan and spread evenly.

6. Bake for 35–40 minutes, or until the center is set and the top is golden.

7. Let rest for 10 minutes before slicing and serving.

8. Store leftovers in the fridge for up to 4 days or freeze for later.

Notes

If using frozen spinach, be sure to squeeze out excess water thoroughly to prevent sogginess.
