Ingredients
2 pounds cube steak
2 cups buttermilk
2 large eggs
2 cups all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
1 cup vegetable oil
2 tablespoons butter
3 tablespoons all-purpose flour (for gravy)
2 ½ cups milk
½ teaspoon garlic powder (for gravy)
Salt and black pepper to taste
Instructions
1. In a shallow bowl, whisk buttermilk and eggs until combined.
2. In another bowl, mix flour with garlic powder, onion powder, paprika, salt, and pepper.
3. Dip each steak into the buttermilk mixture, then dredge in seasoned flour. Repeat for double coating.
4. Heat oil in a skillet over medium heat. Fry steaks 3–4 minutes per side until golden. Drain on paper towels.
5. Pour off most oil, leaving 2 tablespoons. Add butter, then stir in 3 tablespoons flour to make a roux.
6. Gradually whisk in milk while stirring, scraping bits from the pan.
