Ingredients

1.5 lbs steak (sirloin, ribeye, or tenderloin)

1 teaspoon salt

0.5 teaspoon black pepper

1 tablespoon olive oil

4 tablespoons butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

0.5 teaspoon crushed red pepper flakes

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce


Instructions

1. Cut the steak into 1-inch cubes and pat dry. Season with salt and pepper.

2. Heat olive oil in a skillet over high heat. Sear steak cubes in batches for 2–3 minutes per side until browned. Remove and set aside.

3. Reduce heat to medium. In the same skillet, add butter, garlic, parsley, lemon juice, Dijon mustard, Worcestershire sauce, and red pepper flakes. Stir until melted and fragrant, about 2 minutes.

4. Return steak bites to skillet and toss in cowboy butter until well coated. Serve immediately with sauce spooned over top.

Notes

For a crispier sear, make sure your skillet is very hot and avoid overcrowding the pan.

Let the steak rest before tossing it into the butter sauce to keep it extra juicy.
