1 cup wild rice blend
1 tablespoon olive oil
1 cup diced carrots
1 cup diced celery
1 cup chopped onion

6 cups vegetable broth
1 teaspoon dried thyme
1 bay leaf
1/4 cup all-purpose flour
1 1/2 cups milk (or dairy-free alternative)
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes until softened.
2. Stir in garlic and cook for 1–2 minutes until fragrant.
3. Add wild rice, thyme, and bay leaf. Stir and toast for 1 minute.
4. Pour in the vegetable broth and bring to a boil. Cover, reduce heat, and simmer for 45–50 minutes until rice is tender.
5. In a small saucepan, melt butter or heat oil and whisk in flour to create a roux.
6. Slowly add milk while whisking until smooth. Simmer for 3–4 minutes until thickened.

Notes
