Ingredients

4 tablespoons butter

1 medium onion, finely chopped

2 ribs celery, finely chopped

3 cloves garlic, minced

2 tablespoons tomato paste

3 tablespoons all-purpose flour

1/2 cup dry white wine

3 cups seafood stock or chicken stock

1 cup heavy cream

1 teaspoon Old Bay seasoning

1/4 teaspoon cayenne pepper (optional)

1/2 pound lump crab meat

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)


Instructions

1. In a large pot over medium heat, melt the butter. Add chopped onion and celery, and cook until soft and translucent, about 5 minutes. Stir in the garlic and cook for 1 more minute.

2. Add tomato paste and cook for another minute. Sprinkle in the flour, stirring constantly for about 2 minutes to form a roux.

3. Slowly pour in the white wine, scraping up any browned bits from the bottom.

4. Pour in the seafood stock, stir to combine, and bring to a gentle simmer. Let the mixture cook for about 15 minutes to develop flavor.

5. Use an immersion blender to puree the soup until smooth. Alternatively, transfer in batches to a blender and return to the pot.

6. Reduce the heat to low and stir in the heavy cream, Old Bay, cayenne (if using), salt, and pepper.

7. Gently fold in the lump crab meat and heat through for another 5-7 minutes.

8. Ladle the bisque into bowls and top with fresh parsley. Serve warm.

Notes

For a smoother texture, strain the bisque after blending.
