1 tablespoon water
2 teaspoons fresh thyme leaves or 4 sprigs
Instructions

2. Roll out the puff pastry and place it on the sheet. Score a 1-inch border and prick the center with a fork.
3. Spread the cranberry sauce within the scored border.
4. Layer brie slices evenly over the sauce.
5. Sprinkle cooked pancetta and fresh thyme on top.
6. Beat the egg with water and brush the pastry edges.
7. Bake for 20–25 minutes or until the crust is golden and cheese is bubbly.
8. Cool slightly, slice, and serve warm or at room temperature.
Notes
Thaw puff pastry in the fridge for even handling and best results.
Substitute bacon for pancetta if desired—just ensure it’s crisped well.
