2 large eggs

⅓ cup fresh orange juice

1 tablespoon orange zest

⅓ cup vegetable oil

1 teaspoon vanilla extract

1 ¼ cups cranberries (fresh or frozen)

1 tablespoon flour (for coating cranberries)

½ cup powdered sugar (for optional glaze)

12 tablespoons orange juice (for optional glaze)


Instructions

1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan. Line with parchment paper.

2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.

3. In a separate bowl, beat eggs and sugar until light and creamy. Mix in yogurt, orange juice, orange zest, vanilla, and oil.

4. Gradually add the dry ingredients to the wet mixture and stir until just combined.

5. Toss cranberries in 1 tablespoon of flour to prevent sinking, then fold them into the batter.

6. Pour the batter into the loaf pan and bake for 50–60 minutes until a toothpick inserted in the center comes out clean.

7. Let the bread cool for 15 minutes in the pan, then remove and cool completely.

8. For glaze (optional): mix powdered sugar and orange juice until smooth and drizzle over cooled bread.
