Ingredients
3 1/2 cups bread flour
1 1/4 cups warm water
2 1/4 teaspoons active dry yeast
2 tablespoons granulated sugar
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon
3/4 cup dried cranberries
3/4 cup raisins
3/4 cup chopped walnuts
1 tablespoon olive oil
2 tablespoons extra flour for shaping
Instructions
1. In a large bowl, stir together the warm water, active dry yeast, and granulated sugar. Let it sit for 5 to 10 minutes until foamy.
2. Add the bread flour, salt, ground cinnamon, and olive oil. Mix until a shaggy dough forms.
3. Fold in the dried cranberries, raisins, and chopped walnuts until evenly distributed throughout the dough.
4. Transfer the dough to a lightly floured surface and knead for 8 to 10 minutes until smooth and elastic.
5. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
6. Gently deflate the dough and shape it into a round loaf. Place it on parchment paper or in a floured proofing basket.
7. Cover and let it rise again for 30 to 45 minutes until puffy.
8. Preheat the oven to 425°F. If desired, place a Dutch oven or baking stone inside while preheating.
9. Bake the loaf for 30 to 35 minutes until deep golden brown and the bread sounds hollow when tapped.
10. Cool completely on a wire rack before slicing and serving.
Notes
Avoid adding the dried fruit and walnuts before the dough has started coming together, or they can make kneading harder and keep the loaf from developing a strong structure.
