Ingredients
3 cups cooked rotini pasta
2 cups shredded cooked chicken (rotisserie is perfect)
1 ½ cups shredded mozzarella cheese
½ cup grated parmesan cheese
1 ½ cups marinara or tomato sauce
½ cup heavy cream or half-and-half
1 tsp garlic powder
1 tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional)
Salt and pepper to taste
2 tbsp chopped fresh parsley
¼ cup seasoned breadcrumbs (optional)
1 tbsp olive oil or melted butter (for breadcrumbs)
Instructions
- reheat oven to 375°F (190°C).
- Cook the pasta until al dente, drain, and set aside.
- In a bowl, mix marinara, cream, garlic powder, Italian seasoning, red pepper flakes, salt, and pepper.
- Add pasta, chicken, and half the cheeses. Mix until well coated.
- Pour into a greased 9×13-inch casserole dish.
- Top with remaining cheeses.
- Combine breadcrumbs with oil or butter, and sprinkle on top.
- Bake uncovered for 20–25 minutes until bubbly and golden.
- (Optional) Broil for 2–3 minutes for a crispier top.
- Rest for 5 minutes, garnish with parsley, and serve hot.
