Ingredients

225g penne pasta

2 boneless skinless chicken breasts

2 cups broccoli florets

2 cloves garlic, minced

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup chicken broth

1 cup heavy cream

3/4 cup grated parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

1. Boil penne in salted water until al dente. Add broccoli during the last 3 minutes of cooking. Drain and set aside.

2. Season chicken breasts with salt and pepper. Sear in a hot skillet until cooked through and golden. Remove and slice.

3. In the same skillet, melt butter and sauté garlic. Add flour to make a roux, cooking for 1 minute.

4. Gradually whisk in chicken broth and heavy cream. Simmer until thickened.

5. Stir in parmesan cheese until smooth.

6. Add drained pasta, broccoli, and sliced chicken to the sauce. Toss to coat evenly.

7. Serve hot, garnished with extra parmesan or cracked pepper.

Notes

Use rotisserie chicken to cut down cooking time.

Add mushrooms or sun-dried tomatoes for extra flavor depth.
