Ingredients

12 oz penne pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts (cut into bite-sized cubes)

Salt and pepper, to taste

3 cups broccoli florets (fresh or frozen)

3 cloves garlic, minced

2 tablespoons butter

1 tablespoon all-purpose flour

1½ cups heavy cream

¾ cup grated Parmesan cheese

½ teaspoon onion powder

¼ teaspoon red pepper flakes (optional)

Additional Parmesan, for garnish


Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to package directions. Add broccoli in the last 3 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook until golden and fully cooked. Set aside.
  3. In the same skillet, melt butter. Add garlic and cook for 1 minute. Stir in flour to form a roux.
  4. Slowly whisk in heavy cream. Simmer until thickened. Stir in Parmesan, onion powder, and red pepper flakes.
  5. Add cooked pasta, broccoli, and chicken. Toss to coat evenly in sauce. Heat through for 2-3 minutes.
  6. Serve hot, garnished with extra Parmesan.
