Ingredients

8 oz shell pasta (or any short pasta)

3 cups broccoli florets, chopped

2 tablespoons unsalted butter

2 cloves garlic, minced

2 tablespoons all-purpose flour

2 cups whole milk

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Pinch of nutmeg (optional)

Red pepper flakes (optional garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions. In the last 2–3 minutes, add the broccoli. Drain and set aside.
  2. In a skillet, melt butter over medium heat. Add garlic and cook for 30 seconds until fragrant.
  3. Stir in flour and cook for 1–2 minutes, whisking constantly to form a smooth roux.
  4. Gradually whisk in the milk. Cook for 3–4 minutes until slightly thickened.
  5. Reduce heat and stir in cheddar and Parmesan cheeses. Mix until smooth and melted.
  6. Season with salt, pepper, and a pinch of nutmeg (if using).
