Ingredients
12 oz fettuccine pasta
2 large chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
1 ½ cups heavy cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Salt, to taste
Freshly ground black pepper, to taste
2 tablespoons chopped parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook fettuccine until al dente. Drain and reserve 1/2 cup pasta water.
2. Rub chicken with olive oil and coat with Cajun seasoning.
3. In a skillet over medium-high heat, sear chicken for 6-7 minutes per side or until cooked through. Let rest, then slice.
4. In the same skillet, reduce heat and melt butter. Sauté garlic until fragrant.
5. Pour in heavy cream and simmer. Add mozzarella and Parmesan, stirring until smooth.
6. Toss in cooked fettuccine, adding pasta water as needed to loosen sauce.
7. Plate pasta and top with sliced Cajun chicken. Garnish with parsley and serve hot.
