Ingredients

1 lb chicken breast

1 ½ tbsp Cajun seasoning

3 tbsp olive oil

1 can (15 oz) chickpeas, drained and rinsed

10 oz spaghetti or fettuccine

¾ cup crumbled feta cheese

34 cloves roasted garlic

½ cup Greek yogurt

2 tbsp fresh parsley, chopped

Salt and pepper, to taste


Instructions

1. Slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast at 400°F for 35-40 minutes until caramelized. Cool before using.

2. Toss chickpeas with 1 tbsp olive oil, ½ tbsp Cajun seasoning, and salt. Roast at 400°F for 25-30 minutes until crispy.

3. Cook pasta according to package instructions. Reserve ½ cup pasta water before draining.

4. Dice chicken breast and season with 1 tbsp Cajun seasoning. Sauté in 1 tbsp olive oil over medium heat until browned and cooked through (6-8 minutes).

5. In a food processor, blend feta, Greek yogurt, and roasted garlic until smooth. Add pasta water if needed for creaminess.

6. Mix pasta with whipped feta sauce. Top with Cajun chicken and crispy chickpeas. Garnish with parsley and cracked pepper.

Notes

Don’t skip roasting the garlic—it mellows out and adds depth to the whipped feta.

Keep chickpeas crispy by storing separately and reheating in a dry pan.
