Ingredients

12 oz bowtie pasta

14 oz smoked sausage, sliced

1 tablespoon olive oil

1 teaspoon Cajun seasoning (adjust to taste)

1 (14.5 oz) can diced tomatoes

1 cup heavy cream

1 ½ cups shredded cheddar cheese

Salt, to taste

Pepper, to taste

Instructions

1. Boil the bowtie pasta in salted water until al dente, then drain and set aside.

2. In a large skillet, heat olive oil over medium-high heat. Add the sliced sausage and cook until browned.

3. Lower the heat and stir in Cajun seasoning and diced tomatoes. Let simmer for a couple of minutes.

4. Pour in the heavy cream and stir well. Once bubbling gently, add shredded cheddar and stir until melted.

5. Add the cooked pasta to the sauce, tossing until fully coated. Taste and adjust with salt and pepper.

6. Serve hot, garnished with parsley or extra cheese if desired.

Notes

For an extra kick, use spicy Andouille sausage instead of regular smoked.

Stir in fresh spinach during the final minutes for a veggie boost.
