1 lb cooked shredded chicken
3 medium poblano peppers
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
4 oz cream cheese
1 tbsp olive oil or butter

1/2 tsp black pepper
2 tbsp chopped fresh cilantro (optional, for garnish)
1 lime, cut into wedges (optional)
Instructions
1. Roast the poblano peppers over an open flame or under a broiler until the skins are blackened and blistered. Place them in a covered bowl for 10 minutes, then peel, deseed, and chop them.
2. In a large pot, heat olive oil or butter over medium heat. Add diced onion and sauté until soft and translucent, about 5 minutes.
3. Add minced garlic and cook for another 1 minute until fragrant.
4. Pour in the chicken broth, add the roasted poblanos and shredded chicken. Bring to a simmer and let it cook for 15 minutes to blend the flavors.
