Ingredients
6 medium russet potatoes, peeled and diced
3 cups fresh broccoli florets
2 cups shredded sharp cheddar cheese
1 small onion, finely chopped
3 cloves garlic, minced
4 cups vegetable or chicken broth
1 cup heavy cream or half and half
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Peel and dice the potatoes. Chop broccoli into small florets. Mince garlic and finely chop onion.
2. Add potatoes, onion, garlic, and broth to the crockpot. Cover and cook on low for 5–6 hours.
3. Use an immersion blender to puree part of the soup, leaving some chunks.
4. Stir in the broccoli and cook for an additional 30 minutes.
5. Add shredded cheddar and cream. Stir until smooth and fully melted.
6. Season with salt and pepper to taste. Serve hot, topped with extra cheese if desired.
Notes
For a thicker soup, mash more potatoes after cooking before adding the cream.
