Ingredients
2.5 pounds russet potatoes
1 cup heavy cream
0.5 cup whole milk
0.25 cup unsalted butter
1.5 cups shredded cheddar cheese
0.5 cup grated parmesan cheese
1.5 teaspoons salt
0.5 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
1. Peel and chop potatoes into even chunks. Boil in salted water until fork-tender, about 15-20 minutes.
2. Drain and mash the potatoes. Add butter, cream, and milk. Mix until smooth and season with salt and pepper.
3. Transfer mashed potatoes to a greased baking dish. Fold in half of the cheddar and parmesan.
4. Top with remaining cheeses and smooth the surface.
5. Bake at 375°F (190°C) for 25–30 minutes until golden and bubbly.
6. Let it rest for 5 minutes, then garnish with parsley and serve.
