Ingredients
2 tablespoons butter
2 large yellow onions, thinly sliced
2 cloves garlic, minced
1 teaspoon thyme (fresh or 1/2 tsp dried)
1 cup beef broth
1 cup heavy cream
18 ounces cheese tortellini (fresh or refrigerated)
1 cup grated Parmesan cheese
Salt and black pepper to taste
Instructions
1. In a large skillet, melt butter over medium-low heat. Add onions and cook, stirring occasionally, until deeply caramelized (about 15–20 minutes).
2. Stir in garlic and thyme, cook until fragrant (1–2 minutes).
3. Add beef broth, scraping any browned bits from the bottom of the pan. Let it simmer for 3–4 minutes.
4. Stir in heavy cream and reduce heat to low, warming through without boiling.
5. Add cooked tortellini to the pan and toss to coat evenly in the sauce.
6. Remove from heat, stir in Parmesan cheese until fully melted and creamy.
7. Season with salt and pepper to taste, garnish with thyme and serve immediately.
Notes
For even deeper flavor, deglaze the onions with a splash of white wine before adding the broth.
Frozen tortellini works too—just increase the boil time and drain well before adding to the sauce.
