Ingredients
2 pounds Yukon Gold potatoes, peeled and cut into chunks
6 cloves garlic, peeled
1/2 cup unsalted butter
1/2 cup heavy cream (warm)
1/4 cup sour cream
1/4 cup whole milk (warm)
1/4 cup chopped fresh parsley
1 tsp chopped fresh thyme (or 1/2 tsp dried thyme)
Salt and pepper, to taste
Olive oil, for roasting garlic
Instructions
- Preheat oven to 400°F (200°C). Place peeled garlic cloves on foil, drizzle with olive oil, wrap, and roast for 25 minutes until soft and golden.
- In a large pot, cover potatoes with cold water and salt. Bring to boil, then simmer until fork-tender (15–20 mins). Drain and return to pot.
- Add roasted garlic, butter, warm cream, sour cream, and warm milk. Mash until smooth.
- Stir in parsley and thyme. Season with salt and pepper.
- Serve warm with optional garnish of butter or herbs.
