Ingredients
1 lb beef sirloin or stew meat, cut into small cubes
1 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1/2 cup beef broth
1/2 cup heavy cream
1/2 tsp salt
1/4 tsp black pepper
9 oz refrigerated cheese tortellini
2 cups fresh spinach, roughly chopped
Grated Parmesan cheese, for garnish
Instructions
-
Heat olive oil in a large skillet over medium-high heat. Add beef cubes and sear until browned on all sides, about 5-6 minutes. Remove from pan and set aside.
-
Reduce heat to medium and add butter, garlic, and red pepper flakes to the same skillet. Sauté for 1 minute until fragrant.
-
Pour in beef broth, scraping the bottom to release any browned bits. Stir in heavy cream, salt, and black pepper. Simmer gently.
-
Add the cheese tortellini to the skillet and cook for 4-5 minutes, or until tender.
-
Return beef to the pan, add spinach, and stir until wilted, about 2 minutes.
-
Adjust seasoning if needed. Serve warm with grated Parmesan.
