Ingredients

4 boneless chicken thighs

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons butter

3 cloves garlic, minced

1/2 cup chicken broth

1/2 cup heavy cream

1 tablespoon chopped fresh thyme

1 tablespoon chopped parsley (plus more for garnish)

3 cups mashed potatoes (prepared)

1 cup baby carrots


Instructions

1. Pat chicken thighs dry and season with salt and pepper.

2. Heat olive oil in skillet; sear chicken thighs on both sides until golden brown. Remove and set aside.

3. In same skillet, melt butter. Add garlic and sauté for 1 minute.

4. Pour in chicken broth, scraping up any browned bits.

5. Stir in heavy cream and chopped herbs. Simmer for 5 minutes.

6. Return chicken to skillet and add carrots. Cover and simmer 15–20 minutes.

7. Meanwhile, prepare mashed potatoes if not already made.

8. Serve chicken and carrots over mashed potatoes with plenty of sauce.

9. Garnish with fresh parsley and enjoy.

Notes

Let the sauce simmer gently to avoid curdling the cream.
