Ingredients
2 boneless skinless chicken breasts
1 cup cremini mushrooms, sliced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
3 cloves garlic, minced
2 tablespoons butter
2 tablespoons olive oil
1.5 pounds baby potatoes, halved
2 tablespoons hot honey
Salt, to taste
Black pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
Instructions
1. Preheat oven to 425°F. Toss halved baby potatoes in olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes, flipping halfway through.
2. In the last 5 minutes of roasting, drizzle potatoes with hot honey and return to oven to caramelize.
3. Season chicken breasts with salt and pepper. Heat olive oil in a skillet and sear chicken for 5–6 minutes per side until golden and cooked through. Set aside and keep warm.
