Ingredients

1 tbsp olive oil

2 chicken breasts, diced

Salt and black pepper, to taste

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

3 cloves garlic, minced

½ cup sun-dried tomatoes, chopped

1 cup chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

1 (20 oz) package cheese tortellini (refrigerated or frozen)

Fresh parsley, chopped (for garnish)

Extra Parmesan, for topping (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt, pepper, and Italian seasoning. Cook until golden brown, about 5-6 minutes. Remove and set aside.
  2. In the same skillet, lower heat to medium. Add garlic, sun-dried tomatoes, and red pepper flakes. Sauté for 1 minute.
  3. Pour in chicken broth, scraping up any browned bits. Stir in heavy cream and Parmesan. Bring to a gentle simmer.
  4. Add tortellini and stir to coat. Cover and cook for 4-5 minutes, or until tortellini are tender.
  5. Return chicken to the pan and simmer another 2-3 minutes until the sauce thickens. Garnish with parsley and extra cheese.
