Ingredients
1 lb boneless skinless chicken thighs
1 cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
3 tablespoons olive oil
4 cloves garlic, minced
1/4 cup honey
1 teaspoon chili flakes
1 tablespoon hot sauce
1 cup arborio or short-grain rice
2 tablespoons butter
3 cups chicken broth, warm
1 cup freshly grated parmesan cheese
3 cups baby spinach
Optional: parsley or extra chili flakes for garnish
Instructions
1. Cut chicken into strips and season with salt, pepper, paprika, and garlic powder.
2. Coat chicken in flour and cornstarch mixture.
3. Heat oil in skillet and fry chicken until golden and crispy, about 4–5 minutes per side.
4. Set fried chicken aside on paper towels.
5. In the same pan, sauté garlic, then stir in honey, chili flakes, and hot sauce. Let simmer.
6. Toss chicken in the spicy garlic glaze until fully coated.
7. In another pan, melt butter and sauté rice for 2 minutes.
8. Gradually add warm chicken broth, stirring constantly, until rice is creamy and al dente.
9. Stir in parmesan until melted. Add spinach and cook until wilted.
10. Serve rice with spicy chicken on top. Garnish as desired.
Notes
For even crispier chicken, let it rest 5 minutes before tossing in glaze.
