2 tablespoons olive oil

1 medium onion, chopped

3 garlic cloves, minced

2 medium carrots, chopped

2 cans (15 oz each) cannellini beans, drained and rinsed

4 cups vegetable broth or chicken broth

1 cup heavy cream

3 cups kale, chopped

1 cup grated Parmesan cheese

1 teaspoon salt

0.5 teaspoon black pepper


Instructions

1. Heat olive oil in a large soup pot over medium heat. Sauté onion and carrots until soft, about 5–7 minutes.

Notes

For a thicker soup, mash a portion of the beans before adding the cream.
