12 oz rigatoni pasta
1 cup pumpkin puree
3/4 cup heavy cream
1/2 cup grated parmesan cheese
2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley
1/2 cup reserved pasta water
Instructions
1. Boil a large pot of salted water and cook rigatoni until al dente. Reserve 1/2 cup pasta water and drain.
2. In a large skillet, heat olive oil over medium heat. Sauté onion until soft, then add garlic and cook 1 minute.
3. Stir in pumpkin puree. Add heavy cream, salt, pepper, and nutmeg. Stir until smooth and heated through.
